"The Aldo"

Aldo (Stevens’s father) has tendered to a small vineyard in the Barossa his entire life with great care and consideration to produce the highest fruit quality. The vines are about 70 years old and are dry grown. The fruit is hand harvested and crushed into open fermenters with a small parcel going through natural fermentation. After 12 days on skins the wine is basket pressed to older French oak bariques for maturation. At blending, Shiraz is added to give texture, weight and complexity to the palate. We bottle the Aldo early to capture the fresh fruit characters.
